Well this last week Little R has had her cranky pants on as soon as it’s time for this mamma to cook dinner, so it’s been a bit of a frustrating time. It is also why, having these meal plans pre done and all of the food ready to go in the refrigerator makes life soooo much easier!

A hot tip for you, if you have any of the chickpea and zucchini fritters left over from Monday night they actually make for a great breakfast/brunch topped with some avocado and an egg! Seriously, I tried it out this week and it was amazing! I posted about it on Instagram, so if you are not already following me on there, well you should start!

Weekly Meal Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Toast with almond butter and strawberries – Trust me it is delicious!
Tuesday: Overnight oats – a favourite of mine! Sooooo easy and sooooo delicious!
Wednesday: Toast with almond butter and strawberries
Thursday: Overnight oats
Friday: Toast with almond butter
Saturday: Chilaquiles frittata – something a little bit fancy to spice up your Saturday night
Sunday: Baked fish fillet sandwiches
Monday: Zucchini chickpea fritters & side salad of lettuce, cherry tomatoes and red onion.
Tuesday: Slow roasted pork carnitas – with avocado, cheese and tortillas, maybe also some red cabbage and lime! Warning slow cooker needed!
Wednesday: Incredible italian meatballs
Thursday: Thai chicken lettuce wraps
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
