Welcome to this week’s meal plan! I am so glad you could stop by and check out our weekly meal planning inspiration. If you have not been here before, each week I do up a meal plan, probably more like a menu plan really but each plan includes breakfast and dinner inspiration. The recipes I include are sourced from my favourite food bloggers, so you don’t have to spend time scouring the internet!
The reason I do these meal plans is because I absolutely LOVE having a meal plan each week, I am honestly lost without one. Take for example this week…. well I kind of fell of the meal plan wagon! I had a very big deadline at my work, that saw me working longer hours than usual and I didn’t organize my meal plan completely on the weekend so I was left scurrying most nights to figure out what I would feed my family! I also have one hungry and come 6.30pm CRANKY near 2 year old. So basically if she doesn’t have her dinner on the table at 6pm all hell breaks loose. So because I know how much planning my meals each week helps me, I wanted to offer my help by doing up these meal plans to all you busy people out there!
I try and include recipes that are quick, easy and mostly healthy. Also as you can see lunch is not included, I am just a leftover girl myself. So my recommendation here is to try and make enough at dinner the night before to be able to have as lunch the next day. That may not be possible all of the time of course. Oh and final thoughts, breakfast is included BUT I know some people just want a super quick and easy breakfast so if your not a breakfast kind of person please ignore but still make the most of the dinner suggestions. I, however LOVE breakfast and I mix mine up as much as I can – it’s seriously the best meal of the day!

Weekly Meal Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Wholegrain toast with ricotta, sliced banana and sprinkled with cinnamon (option to add crumbled walnuts).
Tuesday: Almond butter, strawberry & banana overnight oats with chai – I love all of the recipes over at Ambitious Kitchen and this one is no exception. I use normal milk instead of Almond milk and regular rolled oats instead of gluten free..
Wednesday: Wholegrain toast with ricotta, sliced banana and sprinkled with cinnamon (option to add crumbled walnuts).
Thursday: Almond butter, strawberry & banana overnight oats with chai – Yup this recipe pops up regularly on these meal plans. It is just that good!
Friday: Wholegrain toast with ricotta, sliced banana and sprinkled with cinnamon (option to add crumbled walnuts).
Saturday: Mushroom & spinach omelette – I included this last week and loved it so much I wanted to include it again as a treat for your Saturday morning!
Sunday: South african curry and rice – A delicious and simple curry for all! I’ll be honest and say I have not been able to find the specific curry powder mentioned so I kind of cheated and used normal curry powder and garam masala – in case others are in the same boat as me. It was still delicious!
Monday: Healthy southwest pasta salad – A super simple, yummy weeknight dinner for all! Note: I cannot find the adobo sauce anywhere so I leave it out. Also you can use regular pasta instead of the lentil and quinoa pasta in the recipe.
Tuesday: Garlic parmesan halibut – Serve it up with a little rice and asparagus! Yum!
Wednesday: 15 minute spicy udon noodles – I like to add a little thinly sliced pork to this one!
Thursday: Crispy slow cooker carnitas – Remember to get organized with your slow cooker for this one!
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
