First off let me apologize for not having published a new meal plan these last few weeks, I hope despite this you have been able to look through old meal plans and find one to suit your needs. I really appreciate all of my fabulous readers so I hope you can forgive my absence!
Now for the reason…
Just over a month ago the house we were renting was hit by lightening and caught fire. It was around 5.30am in the morning and although earlier I had heard a loud lightening bang I didn’t realize it had hit the house and went back to sleep. My husband was away for work so it was just myself, our 2 year old daughter and one eyed husky at home. I was awoken at 5.30am in the morning by loud banging on the door and the door bell ringing, after freaking the hell out for a few minutes I crept down the stairs, whilst trying to FaceTime my parents in Australia (as it would have been the daytime for them) and finally realized it was a neighbour making all the racket. They got me to look outside where I saw the small fire on the roof and quickly ran upstairs to get my daughter and puppy, I passed them off to neighbours and was able to run through the house and grab a few things on my way out. During this time the fire was not too bad, it has not even entered the house yet and there was no smoke in the house nor fire alarms going off so really the whole experience to waking up to a fire wasn’t too bad. Every now and then I do wonder what if our neighbour had not looked out his window, what would we have woken up to. But honestly, it is too scary of a thought to contemplate for too long.
For the next few hours I watched as the fire got worse and took off through the house as well as spread to the townhouses on each side of us. The fire department were there trying to put the fire out but it was not really co-operating. At first I honestly thought it would all be a minor inconvenience but as time wore on I realized that would not be the case. In the end, three families, the other two of which owned their townhouse and had made it their home for themselves and their families are without homes for the next 8-12 months while they rebuild. It seems the damage to our house was the worse, and while although we did not own the house all of our contents were destroyed by fire or water (mostly water). So we had to find a new place to live and pretty much start again. It’s been an extremely tough time for us all, and that little extra troubling as we are expecting our second child in January and all of our baby supplies from our daughter were being safely (or not so safely in this case…) stored in the basement. These have now all be destroyed.
Regardless of all of this I am so very grateful to our neighbour for spotting the fire so early and allowing everyone to get out without injury. That is THE number one most important thing here. Secondly, the support and kindness offered to us from family, friends, neighbours and strangers has been nothing short of amazing. I am so grateful for everything that everyone has done for us, I am not sure how I can ever repay this kindness but I will try. So although we are moving forward and figuring out the insurance side of things, I have found it very difficult to actually write this post, but I also didn’t want to just post another meal plan without explaining why I have been absent.
Next week I will start the meal plans again. They will be pretty simple meal plans as we build up our home supplies again including all of our spices and sauces but as always I will be sure to include tasty and family friendly recipes.
So until then please browse through all of the previous meal plans and now that I have faced this hurdle I will start to get you those meal plans again! I have also been holding onto this very tasty granola recipe that I need to post!
