Howdie! Welcome to this weeks meal plan. This week I have some wonderfully warm weather appropriate breakfast and dinner inspiration for you!
I absolutely love the simplicity of overnight oats and paired with almond butter, the overnight oat recipe over at Ambitious Kitchen is one of my favourite easy peasy breakfast recipes. So much so that it makes a regular occurrence on these meal plans. Why mess with something thats working!
The dinner recipe’s are fresh and wonderfully delicious! The Spicy Thai Chicken and Quinoa is definitely a winner and will definately be making a re-occurance.
Weekly Meal Plan
Sunday: Pancakes – add in some vanilla and served with vanilla greek yoghurt and strawberries.
Monday: Almond butter, strawberry & banana overnight oats with chai – I love all of the recipes over at Ambitious Kitchen and this one is no exception. I use normal milk instead of Almond milk and regular rolled oats instead of gluten free..
Tuesday: Scrambled eggs – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, make your toast! Voila!
Wednesday: Almond butter, strawberry & banana overnight oats with chai.
Thursday: Scrambled eggs (see Tuesday).
Friday: Almond butter, strawberry & banana overnight oats with chai.
Saturday: Whole egg, bacon and avocado quesadilla.
Sunday: Sloppy Joes – a bit of a Sunday night family treat. Serve these bad boys up with a little salad to keep up your veggie intake!
Monday: Roasted Vegetable Mac and Cheese – your meatless Monday dinner inspiration!
Tuesday: Spicy Thai Chicken and Quinoa
Wednesday: Grilled Chilli Lime Fish Tacos
Thursday: Thai Stir Fry Noodles.
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
