Welcome to this week’s meal plan, this past week has been a bit of tough one both myself and my daughter have been sick which is a shame as the weather has been so nice! Hopefully we are back on the mend next week and are able to get out and enjoy this beautiful weather. Little R has also been a bit difficult come late afternoon/early evening when it’s time to prep dinner, which I wrote about this week but we are working through some of the strategies I outlined in the ‘surviving witching hour‘ post to make meal prep a bit easier.
I am pretty excited about this week’s meal plan, let me give a little should out to my two standout dishes the Caramelized pork tacos with pineapple salsa and chilli sauce and Baked mozzarella chicken. Both of which are simple, quick and super yummy!

Weekly Meal Plan
Sunday: Buttermilk blueberry breakfast cake – Ya’ll know I love my breakfast right?!? Well this week I am taking a step away from the usual Sunday pancakes to cook up this deliciousness. Little R loves loves loves blueberries so I just know she is going to devour this yumminess!
Monday: Chai oatmeal breakfast bowl
Tuesday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Wednesday: Chai oatmeal breakfast bowl
Thursday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Friday: Chai oatmeal breakfast bowl
Saturday: California-style fried egg avocado toast
Sunday: Chorizo penne with mushrooms & sundries tomatoes – Ok I am indulging a little bit here but this recipe has everything I love in it so it is a little special treat for your Sunday. With a half hour total prep and cooking time you cannot go wrong!
Monday: Thai curry vegetable soup – It’s summer I know! But my daughter absolutely loves soup, so I have included this very delicious looking soup for your meatless Monday meal.
Tuesday: Caramelized pork tacos with pineapple salsa and chilli sauce – We are back at summer with these easy breezy looking tacos!
Wednesday: Dijon maple glazed salmon – served up with asparagus, broccoli and sweet potato
Thursday: Baked mozzarella chicken – with a simple salad of spinach, cherry tomatoes, red onion drizzled with olive oil and balsamic vinegar.
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
