Hubby and I recently had our first adults only night, which consisted of dinner with friends and it was Oh. So. Amazing! We had just found a babysitter and hired her out for the first time, her job was pretty easy as Little R was asleep by the time we left, but all we really needed was someone we trusted to be home with her and let us know if she woke up. Which she didn’t! Thank you Little R! To be honest, the sitter probably had more work keeping our one eyed husky company as he is currently dealing with a serious case of separation anxiety…
Following our little weekend getaway in Prince Edward County, hubby has taken off to Portugal for work, soaking up the sun while we are dealing with the aftermath of about 20cm of snow here, so I am very envious of him! The 12 deg day we had on Sunday, seemed like a little teaser of the spring that is to come! I was able to get out and enjoyed a run with our husky and I have to admit to feel the sun on my skin again was phenomenal! I can’t wait for spring to get here!
Sunday: Pancakes – add in some vanilla for extra flavour. Mix it up this week by topping with some greek yoghurt, blueberries and strawberries!
Monday: Avocado Grilled Cheese Soldiers with Eggs – This is a super cute take on the traditional toast soldiers and eggs. I’ve been wanting to try this with Little R for a while now to see how she goes dipping toast into an egg, I’m excited which will probably mean she hates it. It’s always the way…
Tuesday: Blueberry banana-nut oatmeal – Oatmeal is a sure fire way to get Little R a decent breakfast in before daycare and this combo = delicious! The original recipe is gluten free, but I don’t follow a gluten free diet so just a note on your shopping list I have replaced gluten free oats with regular and I list milk in general instead of almond milk. If you want to go gluten free feel free to replace these!
Wednesday: Avocado Grilled Cheese Soldiers with Eggs – Same as Monday 🙂
Thursday: Blueberry banana-nut oatmeal
Friday: Toast with peanut butter and sliced strawberries – I just realized I have not had this in a while and it’s super yummy so I am excited to have it back on the menu. It’s just 1-2 pieces of your favourite bread, topped with your go to peanut butter, with sliced strawberries to top. It’s a really great combo!
Saturday: Italian baked eggs – Something a bit different but very delicious looking for a little weekend treat!
Sunday: Creole chicken and sausage – I love firing up the slow cooker on a Sunday and spending time with the family rather than slaving away making a big family dinner! Just a note with this one, I couldn’t find the Creole spice so I just mixed up my own version as I had most of the recommended spices on hand – do a quick google search and you will find many variations.
Monday: Easy parmesan chicken – serve with arugula tossed with lemon juice and olive oil.
Tuesday: Sweet potato and black bean – I have not added the additional toppings suggested to the shopping list so if you feel like spicing it up see the original recipe for suggestions or create your own!
Wednesday: Slow cooker Korean beef – serve with brown rice and some green beans.
Thursday: Drunken noodles – A little bit of colour to spice up your Thursday.
Friday & Saturday: These are the nights you should totally give yourself a break from cooking! Eat up any delicious leftovers you have in the fridge or get yourself a takeout treat!
