Welcome to My Beauty of Imperfection’s Weekly Meal Plan! Before we get into the deliciousness that is this weeks menu suggestions lets take a minute to talk about how crazy has this weather been! Well in Ontario, Canada at least! The other week I got the ol’ BBQ out ready for spring and then the snow hit. I thought for sure spring was here but alas I was wrong! I hope your all staying warm and that spring will be here for real soon! Fingers crossed 🙂
I’ve received some feedback over the last few weeks on these meal plans and it seems like instead of the pre-filled shopping list I have been doing up each week people would prefer a blank template and to fill out their own. So this week we are making a little change and instead of me including a completed shopping list I’ll put up the blank template for you all! I am actually loving this idea, because over the last few months I have been busy doing up some pretty and super useful meal planning printables just for you, my awesome readers! Weekly Meal Plan
Sunday: Pancakes – add in some vanilla and serve it up with some raspberries
Monday: Toast with almond butter.
Tuesday: Almond butter, strawberry & banana overnight oats with chai – I love all of the recipes over at Ambitious Kitchen and this one is no exception. I use normal milk instead of Almond milk and regular rolled oats instead of gluten free. An oldie but a goodie, seriously you won’t be dissapointed!
Wednesday: Toast with almond butter.

Saturday: Scrambled eggs – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, make your toast! Voila!
Sunday: Beef Enchiladas – The homemade Enchilada sauce in this recipe is amazing! So amazing my near 2 year old daughter ate it as soup. Serve with a simple side salad of lettuce, cherry tomatoes, red onion and avocado drizzled with extra virgin olive oil and balsamic vinegar.
Monday: Thai Quinoa Casserole – Check out this yumminess for a delish meatless Monday meal idea!
Tuesday: Garlic Roasted Salmon with Brussels Sprouts – Serve this up with some roasted potatoes and zucchini for a complete meal.
Wednesday: 20-minute Moo Shu Pork – I love that this meal has the option of serving with some tortilla’s, lettuce cups, quinoa or rice.
Thursday: Spring Roll Bowl – Very light and very delicious, just the thing for your Thursday night meal!
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
