Welcome to the week six meal plan! These menu plans are designed to help busy families plan their weekly menu and keep things easy for you all! All the recipes I use are picked with minimum prep time in mind. Meal plan covers breakfast and dinner with a PRINTABLE shopping list so you all don’t have to even write your own! How nice am I?!? Recipes and shopping list items mostly cover 4 people. I have also been working hard at creating a series of menu planning printable to give to my faithful subscribers. So I am super excited about getting those finished and sending them to you! So stay tuned 😉
Guys it’s nearly Easter! How crazy is that! I hope your are all sorted for your Easter festivities. Hubby is away over Easter so we are lying low here, I have to admit I am being a wee bit lazy with Little R this year, apart from decorating some eggs and giving her some goodies on Easter I am not doing anything special with her. I’ve seen so many craft idea’s floating around, but I kind of feel like I have many years of Easter crafts ahead of me so… while I can get away with not doing too much I will take it!
I am absolutely in love with Almond Butter at the moment, like I have nearly finished a whole jar in a week… I have to take a step back but in the meantime I have included my favourite overnight oats recipe for you again. This is from the fabulous Monique at Ambitious Kitchen. I love all of her recipe’s and the added bonus is that they are pretty healthy, so if you have some time stop by and check out her site!
Sunday: Pancakes – add in some vanilla for extra flavour. Serve it up with some strawberries, bananas and yoghurt!
Monday: Scrambled eggs – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, make your toast! Voila!
Tuesday: Almond butter, strawberry & banana overnight oats with chai – I love all of the recipes over at Ambitious Kitchen and this one is no exception. I use normal milk instead of Almond milk and regular rolled oats instead of gluten free. An oldie but a goodie, seriously you won’t be dissapointed!
Wednesday: Scrambled eggs
Thursday: Almond butter, strawberry & banana overnight oats with chai
Friday: Scrambled eggs
Saturday: It’s Easter weekend – take a break guys and relax!
Sunday: Pot Roast – served with some green beans, zucchini, peas and corn.
Monday: Chana Masala – I love Chana Masala from Indian restaurants but it’s been one of those things that I have never actually made myself. So I was very excited to stumble across this little gem, add to that the fact that my near two year old doesn’t really eat meat but she does love chickpeas. So this one ticks all the boxes for our household! Just a note: I substitute grape seed oil for olive oil and coconut sugar for white sugar in the grocery list. If you want to stick to the original recipe just modify the list to suit.
Tuesday: Apricot balsamic chicken – I have not added the fresh thyme to the grocery list so if your after that just add some to your list. I used some dried thyme for mine and it worked out well!
Wednesday: Slow Cooker Tacos Al Pastor – this looks awesome, I reduce the spices in ours as I am never too sure how spicy something will be so I play it pretty safe for the sake of Little R, but I have left them alone for the purposes of your shopping list!
Thursday: Tuna casserole – I am so unbelievely excited about this one and you totally should be too! It has potato chips in it, potato chips. If you don’t eat meat on Good Friday, the good news with this one is if you make enough for leftovers you can eat it on Friday! Win, win, win. served with some green beans, zucchini, peas and corn.
Friday & Saturday: Go and enjoy your Easter ya’ll! Have a super time and I shall catch up with you next week!
