Hi there lovely people, welcome to this weeks meal plan. If you are in Canada I hope you have been enjoying this beautiful warm weather. It’s been so nice getting outside, hearing the ice cream truck do the rounds and enjoying the parks in shorts and a t-shirt!
The two standouts for me this week were the Baked spaghetti and the Honey chipotle chicken burrito bowls. I loved the bake spaghetti because not only did we get an extra meal out of the leftovers but it would be a great dish to make a double batch of and freeze some for a future meal. The burrito bowls were so delicious and I was so excited I finally found chipotle in adobe sauce at the grocery store. This meal is one of those that you could prep in advance and just serve on up. Also it would be great to make a big batch for lunches for the week. As always there is lots of delicious in store this week so please enjoy!

Weekly Meal Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Granola with some yoghurt, milk and topped with berries
Tuesday: Scrambled eggs with wholewheat toast – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, make your toast! Voila!
Wednesday: Granola with some yoghurt, milk and topped with berries

Friday: Granola with some yoghurt, milk and topped with berries
Saturday: Fried eggs with bacon and avocado – self explanatory, fry up some eggs with a little oil, cook your bacon and drain it on some paper towel and cut up your avocado. Very yummy and very delicious!
Sunday: Baked spaghetti – served with some broccoli, zucchini and corn
Monday: Veggie black bean enchiladas
Tuesday: Honey chipotle chicken burrito bowls – make extra for lunches, you won’t be disappointed!
Wednesday: Tuna cakes with jalapeños – served with a side salad of spinach, cherry tomatoes and red onion
Thursday: Mongolian Beef – add in some extra thinly sliced vegetables like carrot and red peppers/capsicum
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
