Hi there lovelies! Wow this is Week Twelve of the Weekly Meal Plan, which means this is the end of my third month of blogging and creating these meal plans for you!
It’s kind of a big deal for me, I had made a bit of a deal with myself when I started this to stick with it for 3 months and evaluate how it was all going after that time. I’ll be real honest here, when I started this blog – I thought it was going to be sooooo easy. I quite simply, had no idea what it meant to have a blog and how much work it actually takes to post quality content and engaging visuals. I’ll go one step further and say, I think I am doing a pretty crappy job at it. BUT I am having fun and I do love a challenge, I think I can do better and I want to do better so I am going to keep trying my absolute best to produce quality content on this here little old blog. That is in between my day work and spending time with my 2 year old and amazing husband.
Ok so personal stuff aside here is this week’s meal plan!
Weekly Meal Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Mushroom & spinach omelette – super yummy breakfast to start your Monday morning. If you want to be organized fry up enough mushrooms to use for Wednesday and Friday.
Tuesday: Apple & cinnamon oatmeal – Even though the weather is getting warmer, oats are always a great start to the day.
Wednesday: Mushroom & spinach omelette – yup again 🙂
Thursday: Apple & cinnamon oatmeal – If your happy with leftovers you could even cook extra on Tuesday for today’s breakfast.
Friday: Mushroom & spinach omelette – aaaah finishing up your week with another delicious omelette!
Saturday: Loaded breakfast cookies – You can meal prep these cookies during the week, but they don’t take too long to cook and they are totally worth it!
Sunday: Chicken caesar salad (sort of) with greek yoghurt caesar salad dressing – This is a great simple meal for your Sunday. It’s as easy as buying a cooked chicken, adding some cos lettuce, grating some parmesan cheese, adding some croutons and adding anything else your heart desires. I add red onion, cherry tomatoes and avocado. You could also buy caesar dressing but this recipe from Gimme Some Oven is super simple and even though it says NOT to skip the anchovies I do and it still works so…. I’ll leave that one to you!
Monday: Chana masala – I featured this recipe a few weeks ago, but it is that good and that simple that you will want to have it again… and soon.
Tuesday: Oven-roasted sausage and sweet potato – I am so happy I stumbled across this recipe, it is so delicious and really you could use the principles in the recipe and adapt it in multiple ways! I served this one up with some pasta, which was great for sopping up those leftover pan juices. Seriously so good!
Wednesday: One pot greek chicken & lemon rice – Again I am kind of on repeat this week, but I loved this simple chicken recipe last time I made it so here it is again!
Thursday: Baked lemon cod – Serve it up with a side salad (lettuce, red onion, cherry tomatoes and avocado).
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
