Welcome back to week eight of the weekly menu plan’s!
This week I am starting a new, Sunday roast feature. Having a Sunday Roast is one of my treasured childhood memories and now that I have two little kiddies of my own, I want to try and incorporate a Sunday Roast to create that loving family dinner atmosphere I remember from my childhood!

Weekly Menu Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Wholegrain toast with ricotta and raspberries sprinkled with some cinnamon or cocoa
Tuesday: Caramelised Banana Oatmeal – Double up on the recipe to have leftovers for Thursday.
Wednesday: Wholegrain toast with ricotta and raspberries sprinkled with some cinnamon or cocoa
Thursday: Caramelised Banana Oatmeal
Friday: Wholegrain toast with ricotta and raspberries sprinkled with some cinnamon or cocoa
Saturday: Scrambled eggs with sautéed spinach and bacon – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently. Once done add in 2 handfuls of spinach with a clove of crushed garlic and dash of olive oil. Cook stirring until soft. If there is room add in your 2 rashers of bacon and cook to your liking.
Sunday: Roast beef and vegetables – This takes a bit of time to prepare/cook so make sure you set aside enough time. If your not into waiting, perhaps look for a slow cooker recipe instead!
Monday: Avocado Pasta – So easy and delicious. This would also make a good weekday lunch for food prep. I also added some cooked and copped bacon and sprinkled with some parmesan cheese.
Tuesday: Beef Bulgogi – Allow for some time to allow the meat to marinade if you like. Serve up with your choice of rice or lettuce wraps.
Wednesday: Baked Sausages with Apples – This one is great as it involves very little prep time and is a simple on pan dinner that you can throw in the oven and basically forget about while it cooks!
Thursday: Fried Rice
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
