Welcome back to week nine of the weekly menu plan’s!
How did the Sunday roast go for everyone last week? I have to admit it is going to take me a while to get all of the timing right, I know people who effortlessly pull together their roast meals but I am not quite there yet. I was great having all that roast beef left over for lunch though!

Weekly Menu Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Granola + yoghurt + raspberries. Add about 1/4 cup granola to the same quantity of milk. Add in a bit of milk if you like it runny and a handful of raspberries to top!
Tuesday: Avocado on toast with salt, pepper and lime. Toast 1-2 slices of bread each, add mashed avocado, season with salt and pepper and drizzle with lime to finish.
Wednesday: Granola + yoghurt + Berries.
Thursday: Avocado on toast with salt, petter and lime.
Friday: Granola + Yoghurt + Berries.
Saturday: Breakfast taquitos – These are gold! The recipe allows for plenty of extra that can be frozen and quickly reheated for future on the go breakfast treats!
Sunday: Roast Chicken – I actually cut up the potato and sweet potato and placed it under the chicken during cooking. I also separately roasted some brussel sprouts with olive oil, salt and pepper.
Monday: Baked Lemon Salmon – This is probably a little fancy but it looks delish. I am serving it up with an avocado salsa and some spinach on the side.
Tuesday: Slow Cooker Basil Chicken Curry in Coconut Curry Sauce – I LOVE this recipe. There is the step required to brown the chicken in the morning before popping it in the slow cooker. I have never skipped this step as I know it adds extra flavour, but if anyone has let me know how it turned out.
Wednesday: Vietnamese Beef Lettuce Wraps
Thursday: Steak with Creamy Mushroom Sauce – Served up with some steamed broccolini, carrot and zucchini.
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
