Welcome to the first Weekly Menu Plan of 2017 for My Beauty of Imperfection!
At 39 weeks pregnant and expecting baby #2 to arrive any day now, I went a bit crazy with freezer meal prep over the last week. I remember how crazy it was with baby #1 so I wanted to be a bit more prepared this time. On last count I have about 12 freezer meals prepared. Most of which are freezer to slow cooker meals that I can dump straight into the slow cooker/crockpot and let them cook away all day while I tend to the kiddies. If your interested in doing your own freezer meal prep, this is the link I used from Super Healthy Kids. I didn’t test any of the recipe’s beforehand so I can’t vouch for how they will turn out, but I really liked how easy the post was organized and it required minimal additional thought and preparation from me to do up a quick batch of freezer meals. Overall I spent an hour or two at the grocery store, around $150 for supplies and it took me around 3 hours to prep all the meals.
I also have an ever diminishing stash of cookies and banana muffins in the freezer that is supposed to be for post baby but may all get eaten before baby arrives….

Weekly Menu Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Wholewheat/Grain toast with almond (or peanut) butter and sliced strawberries.
Tuesday: Peanut butter baked oatmeal – I exclude nutmeg so add it in if your a lover! I am not gluten of vegan, so you will see on the shopping list I have replaced gluten free rolled oats with rolled oats and almond milk with regular milk. MAKE ENOUGH FOR THURSDAYS BREAKFAST! Serve with strawberries
Wednesday: Wholewheat/Grain toast with almond (or peanut) butter and sliced strawberries.
Thursday: Peanut butter baked oatmeal
Friday: Wholewheat/Grain toast with almond (or peanut) butter and sliced strawberries.
Saturday: Hot Ham and Swiss Croissant – Who doesn’t love a croissant topped with melted cheese and ham! Enjoy!
Sunday: Slow Cooker Beef and Potato Stew – There is a little prep work involved in this one due to browning the beef first so make sure you leave time for that step!
Monday: Parmesan Crumbed Fish – Served with a side salad of lettuce, cherry tomatoes, red onion and avocado drizzled with extra virgin olive oil and balsamic vinegar.
Tuesday: Beef Enchiladas – The homemade Enchilada sauce in this recipe is amazing! So amazing my near 2 year old daughter ate it as soup. Serve with a simple side salad of lettuce, cherry tomatoes, red onion and avocado drizzled with extra virgin olive oil and balsamic vinegar.
Wednesday: Classic Italian Meatballs – served with a little side salad if you wish.
Thursday: Steak and Salad – No recipe needed for this one, just your choice of steak – seasoned with some salt and pepper. Cooked to your liking and served with a side salad of lettuce, cherry tomatoes, red onion and avocado drizzled with extra virgin olive oil and balsamic vinegar.
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
