Welcome back to week ten of the weekly menu plan’s!
This week’s Sunday roast feature is corned beef! I have not made corned beef in a long long time, but I am definitely looking forward to this super easy slow cooker recipe. The thing I love about corned beef is making corned beef fritters with the leftovers and getting an extra meal out of it!
Another re-occuring meal you will start to see is Thursday steak night. It’s another tradition from my childhood that I am bringing into our family meal plan because a. steak is awesome and b. it’s nice to have some re-occurring meals that are easy and you don’t have to think too much about.

Weekly Menu Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Toast with ricotta and raspberries sprinkled with cocoa.
Tuesday: Scrambled eggs – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, make your toast! Voila!
Wednesday: Toast with ricotta and raspberries sprinkled with cocoa.
Thursday: Scrambled eggs (see Tuesday).
Friday: Toast with ricotta and raspberries sprinkled with cocoa.
Saturday: Scrambled eggs (see Tuesday).
Sunday: Slow Cooker Corned Beef – A couple of things to note. I placed some thick cut carrots under the corned beef and made sure it was fully covered by water. I also added some cloves because well I love the flavour it gives corned beef. For the last hour add in some cabbage and extra carrot and serve the corned beef with carrots and cabbage and some white sauce.
Monday: Corned Beef Fritters – Served with leftover veggies or make up a little salad of spinach, cherry tomatoes, red onion and feta (drizzled with olive oil and balsamic vinegar).
Tuesday: Tuna Cakes – Served up with some steamed broccolini, carrot and zucchini.
Wednesday: Chicken Satay Curry – Served with rice. This one is delicious and is going to be a regular in our household!
Thursday: Steak with Creamy Mushroom Sauce – Served up with some steamed broccolini, carrot and zucchini.
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
