Welcome back! First, I need to apologize for the short break between menu plans. We welcomed our beautiful little baby boy to the world mid January and this sleep deprived mumma had zero spare time to work on the menu plans. Luckily we have an extensive range of menu plans on the blog already, so in my absence I hope that you were able to make use of them.
Now onto the main event, even more so this week I am trying to keep the menu plan quick and simple as I now have a toddler and newborn to deal with when prepping meals at night. I hope you enjoy this week’s inspiration! Please if you have any suggestions on meal ideas to include in the plan let me know in the comments below.

Weekly Menu Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Tuesday: Blueberry Chai Oatmeal – Substitute with regular rolled oats if your not after the gluten free version.
Wednesday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Thursday: Blueberry Chai Oatmeal – Substitute with regular rolled oats if your not after the gluten free version.
Friday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Saturday: Scrambled eggs with wholewheat toast – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, make your toast! Voila!
Sunday: Baked Ziti – Served with some steamed broccoli and zucchini.
Monday: One Pan Herb Crusted Salmon
Tuesday: Chicken and Avocado Burritos
Wednesday: Beef Chow Fun
Thursday: Grilled ham and cheese sandwich and salad – Spread butter on outside of bread, add ham and cheese to the middle, cook on medium heat in fry pan until each side of bread is brown and cheese is melted!
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
