Hi there! Thanks so much for stopping by to check out our weekly menu plans. I have to apologize that I have not been as consistent as I would like to be with posting these menu plans. Life seems to get in the way sometimes, you know what I mean?!? Anyway the hubby is off traveling for work often for the next few months, so that means I am only cooking every second or third night and taking advantage of using up all of the leftover we have now! Don’t worry, though, I won’t let that impact what I have planned for our weekly menu plans!

Weekly Menu Plan
Sunday: Pancakes – add in some vanilla to the mixture and serve with some maple syrup and your fav fruit.
Monday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Tuesday: Overnight oats – a favourite of mine! Sooooo easy and sooooo delicious!
Wednesday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Thursday: Overnight oats – a favourite of mine! Sooooo easy and sooooo delicious!
Friday: Toast with avocado – topped with some salt pepper and a squeeze of lime.
Saturday: Scrambled eggs with wholewheat toast – For 2 people, whisk together 3 eggs with a dash of milk and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, make your toast! Voila!
Sunday: Sweet Chilli Salmon – Served with some brown rice and asparagus.
Monday: Chana masala – So yum!
Tuesday: Thai chicken lettuce wraps
Wednesday: Meatballs – Served with some spaghetti and perhaps a little side salad
Thursday: Baked mozzarella chicken – with a simple salad of spinach, cherry tomatoes, red onion drizzled with olive oil and balsamic vinegar.
Friday & Saturday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
