I hope you all enjoy this weeks menu plan. It is Australia Day here today, and it is supposed to be a HOT one where I am! So if you are in Australia Happy Aus Day – stay cool and enjoy the day, possibly with some snags on the barbie.

Weekly Menu Plan
For meal prep this week I will make the grain free granola on the weekend for easier weekday breakfasts. I will also make the corned beef, tuna cakes and spaghetti and meatballs ahead of time to make it easier during the week after work! Best of luck!
Sunday: Pancakes – served with maple syrup and fresh berries. Or try these low carb Coconut Flour Pancakes.
Monday: Scrambled eggs with avocado– For 2 people, whisk together 4 eggs with a dash of milk or cream and salt and pepper to taste. Heat up the fry pan with a dash of olive oil, add the egg mixture, stir frequently add in the cheese (optional). While the eggs are cooking, cut up your avocado and make your toast (if including)! Voila!
Tuesday: Grain free granola served with yoghurt and berries
Wednesday: Grain free granola served with yoghurt and berries
Thursday: Scrambled eggs with avocado– See Monday
Friday: Grain free granola served with yoghurt and berries
Saturday: Fried eggs with avocado and a slice of bacon.
Sunday: Slow Cooker Corned Beef – A couple of things to note. I placed some thick cut carrots under the corned beef and made sure it was fully covered by water. I also added some cloves because well I love the flavour it gives corned beef. For the last hour add in some cabbage and extra carrot and serve the corned beef with carrots and cabbage and some white sauce or you could try this corned beef recipe with creamy mustard sauce (delish!) as a low carb alternative.
Monday: Spicy tuna cakes – with a side salad
Tuesday: Spaghetti and Meatballs – For a low carb option I use this recipe just for the meatballs and this one for the
Thursday: Steak with Creamy Mushroom Sauce with mashed cauliflower plus steamed green beans, zucchini and broccoli
Friday: Take the night off, enjoy leftovers or if your like me some of your fav takeout meals
Saturday: Lettuce wraps
